gemme-what?

Before the word cider reached the Danish vocabulary, the name gemmemost was used to describe when Danish farmers let must from grinded and pressed eating apples ferment in tanks so it would last longer. This gave the must bubbles, alcohol and a new rich flavour.

gemme means to hide (or to save), most is must (or juice)

“hidden must”

translation

As time went by, the gemmemost, and other spontaneaously fermented fruitwines, traditions were lost.
This project is an attempt to bring back those low intervention traditions.
Gemmemost started in a garage as a hobby project between friends back in 2019.
Today, gemmemost is run by Christian, who was the only friend stupid enough to venture out in to a project doomed by alarmingly high production expenses and with no clue on how to run a business.
